Savory Summer Side Dish

Corn Salsa

Serves four as a side

Ingredients:

  • Kernels for 2 corn cobs, about 1 ½ cups
  • 1 (4 oz.) can of mild green chili peppers
  • 1 bell pepper, diced
  • 1 small onion, diced
  • ¼ cup red wine vinegar
  • 1 garlic clove, minced
  • ½ tsp ground cumin
  • 2 Tbsp olive or canola oil
  • Salt and pepper (optional)

 

Directions

  1. Corn SalsaMix the vinegar, garlic, cumin, oil, and salt and pepper together in a large bowl.
  2. Add the corn, chili peppers, red peppers, and onion to the bowl and toss to combine.
  3. Put the bowl in the refrigerator and let it sit for at least four hours to let the flavors develop.
  4. Serve and enjoy!
