Simple Overnight Oats

Growing up you were likely told time and time again that breakfast was the most important meal of the day. Turns out your parents were right!

“Breakfast is essential to kick-start your metabolism and help ward off mid-morning cravings,” said registered dietitian, Whitney Schueneman, RD. “Incorporating breakfast into your morning routine also assists with blood sugar control, which will in turn help with focus and concentration throughout the day.”

However, when you’re dashing out the door to make it to school or work on time, it’s easy to get stuck eating the same meals every morning or grabbing an unhealthy option. Take the blah out of your breakfast routine with this delicious and healthy recipe that can be prepared the night before and makes eating on the go a breeze!

Ingredients:

  • 2 cups rolled oats
  • 2 cups 2% milk
  • 1/3 cup maple syrup
  • 1/2 cup ground flaxseed
  • 1 tsp. ground cinnamon
  • 1 small ripe banana, chopped
  • 1 cup, blueberries, fresh or frozen
  • 1 tsp. vanilla extract

Directions:

In a large bowl, mix all ingredients together. Cover and leave in the fridge overnight, or at least two hours. Stir and serve with optional chopped nuts on top. Add additional milk if needed, for desired consistency. Can be eaten cold or warmed up in the microwave.
